I stumbled upon this recipe when I was out of butter and eggs. Frankly, it turned out to be better than the normal recipe I would follow. And it's healthier! (I guess?)
Since the lockdown, I have made banana bread over 5 times! It's so easy to make and also a great afternoon snack! You can heat it up and even eat with a scoop of vanilla ice-cream... yum!
Ingredients:
Serves 9
3 large black bananas
75ml sunflower oil, plus extra for the tin
100g brown sugar
225g plain flour (or use self-raising flour and reduce the baking powder to 2 heaped teaspoons)
3 heaped teaspoons baking powder
1 teaspoon cinnamon
50g chocolate chip (optional), can also replace with raisins
Instructions:
Heat oven to 180C fan. Mash 3 large black peeled bananas with a fork, then mix well with 75g sunflower oil and 100g brown sugar.
Add 225g plain flour, 3 heaped teaspoons baking powder and 1 teaspoon of cinnamon, and combine well. Add 50g chocolate chips (or raisins), if using.
Bake in an oiled, lined loaf tin for 20 minutes. Check and cover with foil if the cake is browning.
Bake for another 10 minutes, or until a skewer comes out clean.
Allow to cool a little before slicing. It's delicious freshly baked, but develops a lovely gooey quality the day after.
