Classic Lasagne

First and foremost, I would like to confess I struggle with spelling lasagne properly - had to google to make sure I am correctly spelling if for my recipe. Also, I was surprised by how easy it actually is to cook, I had always viewed it to be difficult and time-consuming but it went quite smoothly.


Okay full disclosure, there was time pressure while making cheese sauce and cooking the mince mixture and neatly arranging in the baking dish. But turned out so well and a bit too much for only one person. You know what I did... freezing for future lazy evenings when I lack creativity to come up with a dinner plan.



Ingredients:

Serves 6-8 people


For the mince mixture

  • 500g Minced Beef

  • 1 Large Onion

  • 2 cups mixed vegetables (I used peas, carrots, sweetcorn, green beans and pepper)

  • Oil for cooking, as required

  • Cajun seasoning

  • Salt & Pepper, as required

  • 2 garlic cloves, crushed

  • 400g chopped tomatoes

For cheese sauce

  • 2 Cups of milk, any

  • 2 Tablespoon butter

  • 50g flour

  • 100g grated cheese (I used mature cheddar)

For aligning

  • 1 Packet of Lasagne Sheets

  • Parmesan to sprinkle on top


Instructions:


  1. Pe-heat the over on 180/Fan

  2. In a large pot, fry chopped onions and crushed garlic cloves, until onion turns golden brownish.

  3. Add in the mince and cook through.

  4. Mix in the vegetables and let them all cook together.

  5. Now, add in the seasonings and the chopped tomatoes.


In a separate pot, add in the butter with flour. Whisk it while gradually adding in the milk, trying to avoid any clots.

  1. Add in the grated cheese once flour and milk and fully combined and mix it well with the whisk. I added some pepper and salt to bring some flavour.

  2. In a large baking dish, place the lasagne sheets, cover it up with half the mince sauce, layer up the lasagne sheets and pour over the remaining sauce. Next, add in 1/3 the cheese sauce, topping up with another layer of lasagne sheets. Now, pour the remaining cheese sauce and sprinkle parmesan on top.

  3. Place the baking dish in pre-heated over and bake for 35-40 minutes.

  4. Slice it up and enjoy with your loved ones.
