Chocolate Truffle Cookies

By now you all can probably guess what my favourite thing to bake is...COOKIES! They are so easy to make and are simply delicious and also come in so many flavours! I yet have to conquer the other flavours, till then, you're stuck with the chocolate-y ones. ~All the chocolate loves in the crowd go wild~


So I came across this recipe through a photo of instagram by my friend, Cait. I don't know if it was the photo that was AMAZINGLY taken or were these cookies actually insanely good. There was only one way to find out - try the recipe myself!


The recipe is so simple and easy and makes a LOT of cookies for the amount of ingredients it requires. I would highly recommend you all to try it. (Also, for some reason they remind me of Christmas and get me excited!)



Ingredients:

Makes 16 cookies


  • 80 g plain flour

  • 25 g cocoa powder

  • 1/2 teaspoon baking powder

  • 90 g caster sugar

  • 25 g unsalted butter in small cubes

  • 1 egg

  • 10 ml of vanilla extract

  • 50 g icing sugar (to coat)


Instructions:

  1. Line a baking tray with parchment paper.

  2. Sift the flour, cocoa powder and baking powder into a medium mixing bowl and stir in the sugar.

  3. Using your fingertips, rub the butter into the dry ingredients until the mixture forms a sandy consistency with no large lumps of butter. In a jug mix the egg and vanilla and stir it into the other ingredients. It may seem dry at first, but keep mixing. It's a great arm workout. But I gave up after like 5 minutes and used by hand to made the dough.

  4. Wrap the dough in cling film.

  5. Chill for half an hour.

  6. Preheat the oven to 180C.

  7. Sift the icing sugar into a bowl. Make balls from the chilled dough, then toss each one in the icing sugar till coated completely. Place onto the baking tray, and bake for 10 to 12 minutes.

  8. Let them cool for 10 minutes

  9. Enjoy!
